Between Gordes and Roussillon, Le Phébus & Spa occupies a dry-stone Provençal farmhouse set among oaks, olive trees and the ochre-toned landscape of the Luberon. Thirty rooms and suites use pale fabrics, tiled floors and regional materials, with selected suites opening onto private pools; the separate Villa des Anges offers a larger residential setting. La Table de Xavier Mathieu places Provençal produce at the centre of its menus, joined by the more informal Café de la Fontaine. A heated outdoor pool, spa, hammam, tennis court and garden paths spread through the historic estate.
