Rather than occupy Santorini’s familiar cliff edge, NOŪS spreads through generous gardens in Mesaria at the centre of the island. Earthy colour, textured plaster and stone connect the rooms and suites to the volcanic landscape. Many open to sheltered terraces or private pools. Three restaurants, a substantial main pool and a full spa are joined by yoga spaces, a naturalist garden and a communal fire pit. Planting and courtyards break up the low geometric buildings, allowing the contemporary architecture to sit quietly within the inland landscape.
