On Mérida’s Paseo de Montejo, Rosas & Xocolate joins two restored mansions through courtyards, gardens and a distinctly contemporary use of colour. Rooms combine high ceilings, patterned tiles, dark timber and local craft, with private terraces or outdoor tubs in selected categories. The restaurant focuses on Yucatecan ingredients. The tequila bar, chocolate shop and live-music spaces bring different rhythms to the ground floor. A narrow outdoor pool and spa sit behind the vivid pink façades, preserving the inward-looking layout of the original houses.
