Within Old Jaffa, The Jaffa occupies a restored nineteenth-century French hospital and monastery joined to a restrained contemporary wing. John Pawson and Rami Gil preserved arched windows, pale stone and vaulted spaces while introducing travertine, bespoke furniture and modernist lighting across 120 rooms and suites. An outdoor pool sits in the inner courtyard, alongside spa facilities and Giardino’s Mediterranean dining rooms. The former chapel remains the property’s most dramatic interior, with high ceilings, stained glass and traces of its original plasterwork set against the quiet geometry of the newer building.
