Thyme is less a single hotel than a collection of restored houses, cottages, barns and farm buildings dispersed through the Cotswold village of Southrop. Bedrooms vary with the structures they occupy, using botanical references, natural materials and colours taken from the estate rather than a uniform decorative scheme. The Ox Barn serves seasonal cooking beneath a high timber roof. The Meadow Spa, cookery school, gardens and working farmland broaden the experience beyond accommodation. Paths connect orchards, kitchen gardens and meadowland across the property. The surrounding stone cottages and village lanes remain visible throughout, so the boundary between estate and Southrop itself is deliberately soft.
