Vazisubani Estate is set among vineyards and mature gardens in Kakheti, centred on the nineteenth-century palace and winemaking property established by Georgian nobleman Sulkhan Chavchavadze in 1891. The restored residence contains nineteen rooms, where high ceilings, natural light and elegant furniture make use of the proportions of the original house. Wine is woven through the stay, from the replanted vineyards and historic marani cellar to tastings and meals accompanied by the estate’s own bottles. The restaurant draws on Kakhetian flavours and regional produce, while lawns, old trees and an outdoor pool stretch beyond the pale façade towards the vines and the distant Caucasus.
